Dried Jimbilin Chips

My supervisor at work – Ms. Chin See has a cermai fruit tree in her backyard otherwise known as Starfruit or Chinese Jimbilin. Her tree thrives in Jamaica and she often comes in with lots of ripe jimbilin. I absolutely love eating it because it has a sweet taste but not all my colleagues enjoy it. Miss Annie mentioned that it is nice but she doesn’t eat it personally. Most would eat it raw but Ms. Chin See mentioned there was a recipe to cook it. She said that I should boil it in some sugar and it would become a hot sweet. I decided to approach it by attempting to dry it out.

Time: 2 minute prep, 60 minute cooking time.

Ingredients:

  • 2 tsp of brown palm sugar

  • 3 large jimbilins

  • 2 tin foil trays

Method

  1. Cut the Jimbilin into 1 inch pieces. Can use more if you have more room in your tin foil tray.

  2. Boil water in a pot with a 1 tsp of palm sugar

  3. Add the Jimbilin and turn down heat to low for 15 minutes.

  4. Prep oven to 350 Degrees Fahrenheit. Prep tin foil trays with a layer of aluminum foil as it will stick onto the tray.

  5. Once the oven is heated, use a tong to take out each of the Jimbilin pieces and lay them out 1 inch apart on the foil. Place in oven for 45 minutes.

  6. Take out and immediately sprinkle the other tsp of palm sugar over it. If you wait too long, the Jimbilin will become cold and the sugar will not even out nicely.

  7. Serve as a dry snack! If the Jimbilin is to soft for your tasting, you can put it in longer!

I shared my new snack with my office colleagues and they never thought that Jimbilin would be a dry snack. I loved it as it was a healthy alternative than eating banana and plantain chips every day when I am hungry at work.
